Maintenance

The pans and utensils intended for cooking food should be treated both inside and outside with normal detergents available on the market. If they are tinned it's unwise to use abrasive products, such as nylon scouring pads or steel wool, because this will cause the premature usury of the tin layer. If at the bottom of the container there is a very hard layer of organic matter, due to excessive cooking of food, you may want to remove it boiling water inside, using a small amount of soda (one tablespoon) or ash. This causes the softening of those substances, and facilitates the subsequent removal.
