Tinning

The tinning operation happens when the inside part of the copper vessel is covered with another metal. It's done to avoid that the copper, due to the oxidation caused by substances present in food, becomes a risk factor for health. It can be said that the tin is a precaution to be taken in cases where the copper pot is used or come into contact with strong oxidizing agents such as salt, tomato-based sauces, lemon, wine or accept it, etc. It is not required when the food does not have these characteristics: honey, sugar, polenta, and all the cooking that requires the constant use of a ladle or a whisk to stir the product. Being the copper a metal totally non-toxic, it could always be used without the internal tinning, provided that, to terminate the operations of cooking, the food to be poured into another container.
